I am a few weeks behind on my posts. Birthdays, holidays, life. All got in the way, but in the most glorious of ways. My health journey is clicking right along, and my GP and cardiologist are pretty pleased with my progress. I really need to write a post soon on what has prompted this lifestyle change.
So, I had some stuff in my house, pantry, and fridge that I wanted to use up, and I think this recipe was quite lovely.
This hearty dish brings together bold, comforting flavors with surprising nutritional benefits. The star protein, a tender New York strip steak, delivers high-quality iron and B vitamins, while kidney beans add plant-based protein and fiber that support digestive health and help keep you satisfied longer.
The sauce creates a complex flavor symphony: sweet, tangy crushed tomatoes provide lycopene, a powerful antioxidant, while garlic and onions contribute anti-inflammatory compounds and their aromatic depth. The vodka doesn’t just add sophistication; it helps release alcohol-soluble flavor compounds in the tomatoes, creating a more decadent, more nuanced sauce. Sweet chili sauce introduces an unexpected kick of heat balanced with subtle sweetness. At the same time, Greek yogurt lends creamy tanginess and probiotics (if you opt for cream instead, you’ll get that classic velvety richness).
The warming spice blend of red pepper flakes, basil, and oregano brings both Mediterranean earthiness and gentle heat, while the corkscrew cavatappi pasta cradles every bit of that vibrant sauce.
Here’s the recipe:
Spicy Vodka Sauce with NY Strip, Kidney Beans, and Cavatappi
Ingredients:
- 1 12 oz. New York Strip (sliced)
- 12 oz cavatappi pasta
- 1 can (28 oz) crushed tomatoes
- 2 cans of kidney beans, drained and rinsed
- 1 large onion, finely diced
- 6 cloves garlic, minced
- ½ cup vodka
- ½ cup Greek yogurt (or heavy cream if you have it)
- 3 tbsp sweet chili sauce
- 2 tbsp tomato paste (if available)
- 4 tbsp olive oil or butter (divided)
- 1 tablespoon grapeseed or other neutral oil
- 1 tsp red pepper flakes
- 1 tsp dried basil
- 1 tsp dried oregano
- ½ tsp sugar
- ¼ tsp garlic powder
- Corn starch
- Salt and pepper
- Parmesan if available
Instructions:
- Pat the steak dry, slice it into thin strips.
- In a bowl, mix salt, pepper, garlic powder, and a bit of corn starch.
- Toss the steak strips in the starch mixture.
- Add a tablespoon each of butter and an oil (I used grapeseed). Cook the steaks to your desired temperature. Mine was medium rare. Set aside.
- Cook cavatappi in well-salted water according to package directions, reserve 1½ cups pasta water, drain.
- Heat oil/butter in a large deep skillet or pot over medium heat
- Sauté onions with a pinch of salt until softened and translucent (6-7 minutes)
- Add garlic and red pepper flakes, cook 1 minute until fragrant
- Add tomato paste if using, cook 1 minute, stirring constantly
- Add vodka, let it simmer, and reduce by half (2-3 minutes)
- Add crushed tomatoes, kidney beans, sweet chili sauce, basil, oregano, and sugar
- Bring to a simmer, reduce the heat to low, and cook 15-20 minutes, stirring occasionally
- Remove from heat, stir in Greek yogurt until smooth
- Add cooked pasta and steak, toss to combine (add pasta water as needed to reach desired consistency)
- Season with salt and pepper to taste
- Serve with parmesan and fresh basil if available
It’s comfort food that doesn’t compromise. Rich and indulgent in flavor, yet packed with protein, fiber, and vegetables, making it a genuinely nourishing meal. The result is layers of savory, spicy, tangy, and creamy notes that feel both familiar and exciting on the palate.
It’s not about perfection—it’s about progress, one delicious, nourishing meal at a time.
I’d love to see pictures if you make this.
