Another week, another healthy and delicious meal.
Nourishing From Within: A Wellness Journey Through Flavor
My wellness journey hasn’t been about restriction or deprivation—it’s been about discovering ingredients that truly fuel my body while delighting Stephanie’s and my senses. The components of this dish have become staples in my kitchen, and they’re helping me feel more vibrant from the inside out.
The Power Players:
Tuna has become one of my go-to proteins for a reason. Rich in omega-3s, it supports heart health and reduces inflammation—something I’ve personally noticed makes a difference in how I feel throughout the day. It’s also packed with lean protein and vitamin B12, giving me sustained energy without that heavy, weighed-down feeling. Before this journey started, I was sluggish, for sure.
Shrimp might be small, but it’s mighty. Low in calories yet high in protein and selenium, it’s an antioxidant powerhouse that supports immune function. I love that I can enjoy generous portions without compromising my wellness goals.
Then there’s the aromatic duo: garlic and ginger. These aren’t just flavor enhancers—they’re ancient remedies I’ve re-welcomed into my modern routine. Garlic’s anti-inflammatory properties and ginger’s digestive benefits have made such a difference for me. Plus, ginger has this warming quality that just makes you feel cared for from within.
Rice vinegar and honey create that perfect balance—the vinegar aids digestion and helps stabilize blood sugar, while honey (used sparingly) offers natural sweetness along with antioxidants and antimicrobial properties.
A Symphony of Taste
What I love most about these ingredients is how they create layers of flavor that keep every bite interesting. The tuna has this meaty, almost buttery richness when seared just right—that crispy, caramelized exterior giving way to silky, tender fish inside. It’s umami-forward with a subtle ocean sweetness.
The shrimp brings a delicate brininess that plays beautifully against the bold aromatics. When garlic meets ginger in hot oil, something magical happens—that sharp, pungent garlic mellows into something sweet and nutty, while the ginger adds this bright, slightly spicy zing that wakes up your palate. And, hey! The aromas while they cook? Yaaassss! I find that freezing my ginger root makes it much easier to grate.
The sauce is where everything comes together. Rice vinegar provides a gentle tang—not aggressive like harsh vinegars, but clean and refreshing. The honey adds just enough sweetness to round out those sharp edges, creating a glaze that’s simultaneously savory, sweet, tangy, and aromatic. It clings to the shrimp and drips down into the rice, making each spoonful a complete experience.
The sliced onions add a subtle sweetness and texture—soft and almost jammy after their time in the pan, they become little flavor bombs that tie the protein to the carbs.
Let’s look at the recipe!
Seared Tuna Steaks with Garlic-Ginger Shrimp
Ingredients:
- 2 tuna steaks (6 oz each)
- 1/2 lb frozen cooked shrimp, thawed
- 3 cloves garlic, minced (or “jarlic” as I use)
- 1 tablespoon grated ginger
- 1/2 large onion, sliced
- 2 tablespoons oil (divided)
- 2 tablespoons rice vinegar (or any vinegar)
- 1 tablespoon honey
- Cooked rice for serving
- Salt and pepper
Process:
- Cook rice according to package directions.
- Pat the tuna steaks very dry. Season generously with salt and pepper.
- Heat 1 tablespoon of oil in a skillet over high heat until smoking.
- Sear tuna 1-2 minutes per side for rare/medium-rare. Watch it. It goes quickly. Remove and rest.
- In the same pan, add the remaining oil, and sauté the onion for 3 minutes.
- Add garlic and ginger, cook 30 seconds until fragrant.
- Add shrimp, vinegar, and honey. Toss 2-3 minutes until heated through.
- Slice the tuna and serve it over rice, with the shrimp mixture on top.
Finding Balance
What strikes me most about this combination is the balance—not just nutritionally, but in how the flavors work together. Nothing overpowers; everything enhances. The lean proteins keep me satisfied for hours. The aromatics support my digestion and overall wellness. And the taste? It’s restaurant-quality food that makes me excited about nourishing my body.
This is what wellness looks like for me now: ingredients that serve a purpose beyond just filling my stomach, flavors that make me actually crave healthy food, and meals that prove taking care of yourself doesn’t mean sacrificing pleasure.
It’s not about perfection—it’s about progress, one delicious, nourishing meal at a time.
I’d love to see pictures if you make this.
